Makes about 8 7-inch tacos, and 12 4-inch tacos

– 1 can of jackfruit (about 230 grams)
– 2 tablespoons olive oil
– 1 teaspoon chili powder
– 1 teaspoon cumin (floor)
– 1 teaspoon paprika
– 1/2 teaspoon dried oregano
– 1/2 teaspoon coriander (floor)
– A pinch of salt
– A pinch of cayenne pepper (elective)
– 1 tablespoon brown sugar
– 1/2 tablespoon of chili paste (elective, add spices to your liking!)
– Salt and pepper
– 1/2 cup chopped onion
– 2 or 3 cloves of minced garlic
– Tortilla bread – your selection!
– Lemon slices for garnish (elective)
Avocado and cashew cream:
– 1/2 cup cashews – soaked in a single day or for a number of hours
– 1 avocado, or 1/2 massive avocado
– 1 garlic clove
– Juice of half a lemon
– 1/4 cup coriander
– Salt and pepper
– Water (elective, ~1 tablespoon)
Cabbage salad:
– Half a small cabbage, finely chopped
– 1/4 cup coriander
– 1/2 cup purple onion, reduce into skinny slices
– Juice of 1 lemon
– 1 tablespoon olive oil

*Soak the cashews the evening earlier than or within the morning
Drain the jackfruit, rinse, then chop it in a bowl till it resembles boneless meat. It’s also possible to put it in a ziplock bag, which makes it a bit simpler.
In a small bowl, combine chili powder, cumin, paprika, oregano, coriander, salt, and brown sugar. Then add the chili paste (elective) and a tablespoon of olive oil.
